We use Cyrillic to demonstrate lilypond's usage of non-latin scripts. It
is not essential, but IMHO it is a good thing to have it.
And yes, TeX Gyre would be better because it provides far more glyphs than
the standard Adobe fonts.
The support of OpenType features is something that can't be used yet in
Lilypond, but I hope that we eventually get a proper interface, cf. issue
#1388.
