Please don't forget to tell what LilyPond version you use, otherwise you may get an answer that's irrelevant to the version you have.

See the section on Dynamics in the manual! It has an example with a < > on a single note. Up to version 2.2.6, you can also use inline LaTeX code, such as c4^"$<>$"
