You just have to find out how to input that particular symbol
with your keyboard and your text editor. On my Linux box, I can
press Alt Gr and C to get a .

Since LilyPond 2.5+ no longer uses TeX, you cannot use TeX commands.

Is it still possible to use LaTeX chars in \markup{} ? I'm guessing not, but
I need to ask. I'm specifically wondering about copyright. In previous
versions, we could do

\header{
  copyright = "\center \copyright FooBar 2005"
}
(or some variation of that.)
