As far as I can see, there are only four you're supposed to read, and the Wikipedia page sums it up pretty well: http://en.wikipedia.org/wiki/MIME Most of these RFCs are related to the way MIME files are attached to a mail, AFAICS. Perhaps the only thing to keep in mind is the UTF-8 encoding, as specified in RFC3023.
