Sorry, nothing immediately comes to mind doc-wise, but I can
suggest a different build recipe.

Instead of that, I propose
  touch Documentation/extending.texi
  make         # or make info
  info Documentation/out-www/lilypond-extending.info

info should load the given file, thereby avoiding the make-install.
