When I run your version ly2dvi reports that I am running 1.7.20. When I install from unstable it reports 1.8.1.

I have partially tracked this down. I have both:

-rwxr-xr-x 1 root root 25850 Aug 26 11:23 /usr/bin/ly2dvi

and

-rwxr-xr-x 1 root staff 25648 Jun 7 21:05 /usr/local/bin/ly2dvi

When I install from unstable emacs runs /usr/bin/ly2dvi. When I install from your debs emacs runs /usr/local/bin/ly2dvi.

I looked at lilypond-mode.el and don't right away see why it would go to different place to get ly2dvi but that's as far as I have time to trace it right now.

I don't know whether this suggests a packaging problem or something messed up on my system but I thought it would be good for you to know about this.
