You can do this with some embedded LaTeX code.

In your \header{...}, add the line
  latexpackages = "graphicx"

Then you can do
  \property Staff.instrument    = #"\\rotatebox{90}{Chor}"
for example.

To read more about the \rotatebox command and additional options,
run the command
texdoc grfguide
in your command window.
