Lilypond uses the dynamics, crescendi or decrescendi marks of your
score on midi file too. Just use this marks ( \< \ff \f \p and others)
to set the track volume.
By the way, if you need more settings, try to use a midi sequencer.
Lilypond is better to print the scores.
