First of all, this answer is only relevant for versions up to 2.2.x. In 2.3.x, the page layout is done by LilyPond itself instead of LaTeX.
In LaTeX, \Huge is a larger version of \huge, which in term is larger
than \LARGE, \Large, \large, \normalsize, \small, \footnotesize,
\scriptsize and \tiny. A good introduction to LaTeX is "The Not So Short
