That wasn’t it… *BUT* in the Lilypond preferences, there is a checkbox to "Run Lilypond with English messages", which was for some reason unchecked. Checking it solves my issue (though I’m still not sure why the "default" is Ukrainian!) Thanks everyone! I hope this archived thread helps someone else in the future.
