Don't use texinfo. I definitely recommend to use LaTeX instead to write the document. You can find a full example of a lilypond-book LaTeX document in the manual. For an introduction to LaTeX, I recommend http://www.ctan.org/tex-archive/info/lshort/english/lshort.pdf
