What is a 'variation font'?

I have lines like this:

\override TupletNumber.font-name = "Noto Sans"

What does it mean to 'explicitly specify the font'?

This is a variation font, which LilyPond doesn't support.  I suggest
that you explicitly specify the font in your `.ly` file that you are
