Hello,

Speaking of users (or beginners) I don't think many of them enter the
accidentals (in text) using their unicode values.
Sure, it could happen, when using copy&paste, but I think most users do not
write any unicode characters that are not accessible directly when entering
text with their keyboard.
Thus they would most probably use the lilypond commands \flat, \sharp to
enter accidentals in texts (maybe \text-flat now but I doubt it).

And for those advanced users educated in typography they probably use text
fonts that provide these glyphs and might want to use them anyway and not
to get them replaced by the lilypond ones...
