Whereas in previous versions, we had to use convert-ly to update the syntax in our files, I tried using that this morning, and it used my older version (2.7.20), so now, is that unnecessary? Can we simply compile some of our older files and have them succeed? Or do we do something else?

If your old lilypond files work, then you don't need to use convert-ly. If something doesn't work, then convert it.

This is true of any lilypond input files and any version of lilypond. It just so happens that the syntax didn't change much (if at all) between 2.7.20 and 2.7.30. If you try compiling an input file written for 2.0.4, you will probably encounter some problems.
