The DVI does not include the fonts for the musical symbols so it's
completely
normal that you can't view the music there.
Regarding your dvips problems, please first verify that your
installation works
correctly on normal LaTeX documents. It looks as if the error messages are
related to fonts in the LaTeX part of the document not to LilyPond.
The complaints that look like
dvips: Font CenturySchL-Ital used in file lily-197511619-1.eps is not in
the mapping file.
are also completely normal. LilyPond includes the fonts in non-standard way
(that's the flag -h xxx.psfonts) and nobody has found a way to get rid
of these warnings.
