You can't guess these and hope they will work!

Clues to the answers to questions like these are
to be found in the Program Reference (release 2.10)
or the Internals Reference (release 2.11).  This
is not an easy manual to read, but the Learning
Manual to 2.11 shows you how.  Pretty much everything
in LM applies to 2.10.  Maybe you missed the Learning
Manual, but it is now An Essential Read.  It will
help you discover what is wrong with your attempts,
but here's a clue:

Use \override to set

Staff.KeySignature #'break-visibility
Staff.TimeSignature #'break-visibility

How do you hide end of line cautionary key signatures
and time signatures. I've used:
\once \set Staff.explicitKeySignatureVisibility = #end-of-line-invisible
\once \set Staff.explicitTimeSignatureVisibility = #end-of-line-invisible
which don't work.
I'm only using one staff, with several movements.
