Actually, this *is* mentioned in the docs.

I assume you started reading the Text documentation:

Such indications may be manually placed above or below the staff,
using the syntax described in Direction and placement.

If you follow the link, you'll find the "-" syntax explained in
"Articulation direction indicators".
