Thanks for the guidance. I've tried adding:
\override PaperColumn #'keep-inside-line = ##t
\override NonMusicalPaperColumn #'keep-inside-line = ##t
and as you say it avoids the problem of text flowing over the edge of the
page. However, I am surprised that the default is to allow the overflow.
On my tests, I can see no difference in processing time if those 2 lines are
added - this is with a score taking about 25 seconds to process, and there's
definitely less than a second difference. Given that I can't think of any
instance when the text should go over the side of the page, and the
performance difference is negligible, could the default be changed?

something like that. It's at the end of the manual.
In the 2.13 docs, this section might have moved to Usage.
