Frescobaldi is a great tool! Its "score wizard" (Ctrl+Maj+N) is very useful for beginners, IMHO. Under Windows I use jEdit+LilyPondTool, really nice too. Sometimes I simply use gedit (GNU/Linux) or notepad (windows), when I do small modifications.
