displayLilyMusic should use the current language as set with \language.
However, this is not really a suitable task for LilyPond as it has no
idea concerning text formatting, getting only to see tokens.

Instead you might want to use an editing tool such as Frescobaldi
<URL:http://www.frescobaldi.org>.  Notename language conversion is one
of its announced features, and it should leave your formatting intact.
