instrumentName in style sheet

I'm trying to centralize all layout instructions in a style sheet, but 
I'm struggling with the instrumentName property for GrandStaff. The code 
below works for staves in regular systems, but the font property isn't 
applied to piano staves. Any ideas?

    {
    \Staff
    \override InstrumentName #'font-family = #'sans
    }
