I have an amusing workaround for this particular case,
but this is old [1] by now so check out issue 1320 etc.
Instead of \bar "||" use:
doubleBarLineClosingVB = {
\bar "|."
\once \override Score.BarLine #'thick-thickness = #1.9
}
