This is usually what I do. I use Frescobaldi as a front end and then I can install multiple versions of lilypond in what ever folders I feel like and just use the edit/preferences/lilypond preferences where you can change the default Lilypond version which is easier than monkeying around with moving directories or links. Just make sure it points to the usr/bin/lilypond of what ever version you are wishing to use at the moment.
