Explicit triplets can be set with a single \tuplet command like Urs
suggested. And implicit triplets can be made by scaling the durations:

Yes. Just enclose the whole triplets music in a \tuplet expression.
A first argument of 8 will tell LilyPond to group the triplets in groups of an
eighth note's length.
