All of this would be likely be solved if you added a new header variable for logo and then redefined the title markup(s) accordingly. <http://www.lilypond.org/doc/v2.19/Documentation/notation/custom-titles-headers-and-footers> It’s not really a best practice to overload existing header variables like copyright, title, and so on.
