 * WHAT:The whole animal -- The carcass weight will range from 20-25
   lbs for lamb and 30-35 lbs for mutton.  I handle getting it
   processed and you receive frozen packages -- 2 whole legs; loin and
   rib chops, two to a package; shoulder and trimmings -- half as stew
   chunks, half as ground; bones for stock; organ meats (liver,
   kidneys, heart).
 * WHEN: The meat will be available for pickup the week of May 5th.
   You'll be notified of the exact date.
 * PRICE:This is charged by carcass weight:
     o Mutton:  30-32 lbs at $10/lb
     o Lamb: 20-25 lbs at $12/lb
 * STORAGE SPACE NEEDED:The packaged cuts fit into about 1 to 1.5 cubic
   feet, about the size of a small picnic cooler.
 * DESCRIPTION:  My sheep are much smaller than regular commercial meat
   breeds.  So the cuts are smaller than what you see in the grocery
   store.  A lamb leg might be around 2-3 lbs vs the average of 8-10
   lbs.  The feedback over the past 13 years has been consistently
   positive with regard to tenderness and flavor. Note that mutton is
   typically less tender and more strongly flavored. It is
   traditionally used for stews, curries, and tagines.

FARM's BACKGROUND:As mentioned in past years, the goal of the farm is the establishment of Ouessant sheep (from Ile d'Ouessant off the coast of Brittany) in the U.S. They are a heritage breed, supposedly the smallest in the world -- 25 to 45 lbs, 16-20 inches at the shoulder. Until recently, it was legal to import only sheep semen into the U.S., not live animals or embryos. So we imported semen and have been breeding up from another breed using artificial insemination (AI).  First generation (F1) is 1/2 Ouessant. You take the F1 ewes and AI them to get 3/4ths, take their daughters and AI them to get 7/8ths, and so on.At present, the flock is 7/8ths Ouessant. The ewes are averaging 50 lbs.
