The * is appended to distinguish between the embedded font and any font with the same name (less the " *) on the system. If you delete the " *" Director might be confused as to which font to use--the font on the system or the embedded font.
There's nothing special about the asterisk, or its location. In fact, I usually change the embedded font to put the asterisk in front, i.e. "Times New Roman *" I would change to "* Times New Roman". That way your embedded fonts show up at the top of the font list. A little trick I learned from Terry Schussler (anybody remember him?)
