Hi Fumio,
I'm not sure what the 'application menu' you are referring to is. The finder
menu in the top right hand corner seems to use the Projector's file name (at
least under MacOS 9.04).
Presumably the application thats referring to you Projector as "Projector"
is getting that name from a projector resource - maybe you could use Resedit
(or some other resource editor) to change the "Menu" resources of the
projector (and perhaps the "projector" BNDL resource)
