Robert,

Does this project have to be dual platform?  On the PC side, you may be
able to use a command line MP3 encoder like Blade
(http://bladeenc.mp3.no/) to compress the wavs as mp3's.  Of course,
there are several drawbacks with this:  the files must be external to
the movie, you'll have an interesting time of tracking progress and
telling when it's done (although, there are several front-ends for Blade
that do show progress, so it's got to be possible), free space issues
could be difficult as well.

If you can wiggle through these issues, it may be possible.  Actually,
since Blade is open source, there may even be a Mac port that you can
use to duplicate similar functionality on that side.

I have found several xtras that will record audio saving as .aif's  or
.wav's... but nothing that will save in a compressed audio format.

I have to submit a proposal by Monday at noon so any quick help or ideas
would be greatly appreciated.
