Everyone will tell you about tar. You should also consider cpio, pax and afio.
I like the last because you can tell it the size of the volume9s) and to
compress files and it writes that amount of compressed data to tape. You
might not be so keen on software compression on S/390, but it also has the
advantage that if you have an error on the tape, you can still recover files
after that point.
