You can. It's not recommended at this time. The versions of LVM that are available with the current distributions had/have a problem with system-owned datasets (don't ask me for details, I can't remember them) being on LVM volumes.
If you want to move /usr, /opt and /var, look at http://linuxvm.org/Info/howtos/movefs.html for an explanation of how to do that.
