John, You're not going to be able to do that as part of the install. You'll need to install the system, then create LVM file spaces, and then migrate the data to them. When you say "everything else," please note that /bin /dev /etc /lib /sbin all must be in the root file system (/). Trying to do otherwise is a huge amount of work, and not really worth the effort, in my opinion.
