I would strongly recommend running production Linux under VM as you have more options to repair in case of problems. I am also thinking of clustering. In this case z/VM would be a better environment. I am fairly new to VM compared to many veterans here. I find more options under VM than on bare metal.
On the side ....Recently I was at an IBM Power 5 / AIX training class. They are implementing all the virtualization ideas from VM on Power 5 with a web-based interface. One major difference - the Power 5 virtualization divvies out the CPU in increments of 10%. FYI: We are looking at running Linux under VM for our development environments and running Linux under native LPAR's for production.
