To everyone that chimed in on this, thanks so very much! I did get a useable set if information from /etc/mtab to generate a machine AND human readable fstab. Where certain information was either incomplete or missing, I just generated the values I needed and it all worked out.
I have now taken the cloning process from "Lpar to Virtual Server in 2 days" which generates a 2 disk system (swap and root) and then copies that single disk to a multi-HFS structure mounted over /mnt, /mnt/opt, /mnt/var etc. and created a bootable system on the structure. While the script I have to do this is crude by most people's standards, I'd be happy to share. Just be gentle.
