Since you posted your query on the Linux-390 list, I shall assume you are mostly interested in z/VM as it relates to supporting Linux guests. The place I would start would be with this excellent IBM publication (and it's even free!): "Getting Started with Linux on zSeries" It covers almost all of the topics a novice sysprog needs to know for z/VM, with an emphasis on Linux guests and their support.
