Adding the logical volumes to /etc/fstab is trivial, so don't worry about that.
What you're concerned about is the LVM metadata. That is _not_ kept in the root file system, but on the physical volumes themselves. When you run a vgscan, all the volumes get looked at, and things like lvmtab get created from that information. You should be able to DDR the volumes (assuming you want to _leave_ the same data on the production system for now), activate them on the new system, run vgscan, and them mount them. Look at the /etc/fstab on the production system, and manually enter that on the new system. And everybody, please try to trim your posts. Some of these threads get way too long.
