This reminds me of a question I had been meaning to ask: Does anyone know 
whether the virtualization systems mentioned -- especially Xen and VMWare -- 
support overcommitment of memory?

No one has mentioned that Virtualization (i.e. z/VM) is no longer limited (or 
costly) on Intel. Big Intel servers can now be virtualized using software such 
as:
OpenVZ - see http://www.openvz.org
Xen - see http://www.xensource.com
UML - see http://user-mode-linux.sourceforge.net
and yes of course even:
VMWARE - see http://www.vmware.com
