Encrypted file systems make no difference but once you've got physical
access to any system, a couple of FPGAs and its all over if the system
is running.

On a machine that is shut down the security of some PC class systems is
actually now pretty good in particular the hard drive passwords are
drive implemented and so hard to crack, and some system passwords are
properly implemented on laptops too.
