Our typical response is twofold: 1. by default, have an up2date filter excluding anything with "kernel" in the package name. In fact, rhel does this as it's default install. This means you'll have to manually intervene to get new kernels. 2. have at least one non-production environment for every production environment. Insure these are updated at least 2 weeks before updates hit production, and insure at least minimal testing happens in non-production during this delay. For what it's worth, we've generally not had problems updating between minor kernel revisions.
