Dr. Boyes makes some excellent suggestions regarding
splitting the e-mail workload between two virtual machines
and perhaps a PC-based spam scanner. And SquirrelMail seems
to be a good package to use.

If you are looking for an inexpensive, commercial (i.e.
supported) e-mail solution, I've had very experiences with a
package caller SurgeMail from an outfit in New Zealand;
NetWin Server Software (http://www.netwinsite.com/). It
offers all of the normal e-mail server functionality, plus
extras such as calendar, file sharing, instant messaging,
forum, and chat room modules. Virus and spam scanning can
either be done on the host (not recommended) or on a
separate PC-based Linux system.

If your requirements call for a commercial solution, I would
recommend SuregMail.
