This is at the heart of the issue - many of the Linux
filesystems/directories do not seem to unmount, eg:

vmlxtst5:/# umount /opt
umount: /opt: device is busy
Hence my wish to find an approach that did not require an unmount.

OK. Copy the filesystem to a new smaller one and then point to that.
Again, for filesystems that will not unmount, I will need to reboot and
hope for the best, no?
