You really don't want to run desktop-focussed distributions on zSeries. You've got no graphics hardware--it's just a framebuffer, and the CPU--which is slow compared to the IO system--has to do all the lifting. Debian, on the other hand, works very well indeed, if you configure it as a headless server.
