I've already sent a SIGQUIT via kill as suggested (feel quite chuffed about 
that now! :-). Just thought there might be a way of sending this signal from 
the actual console. It seems like there probably isn't.

Dave - I've tried to enter "^c" and just get:
        sh: ^c: command not found
back from linux! Are you suggesting that the "^" should be mapped to something 
special?

Nope, not a dumb question at all....I think just about everyone that's 
done any signifi9cant work on Linux running under z/VM via the 3270 
console has done this at least once....:-)

Since there is no way to enter a CTRL-x command from the 3270 (it's 
architecture doesn't permit such things), the best thing to do is log 
onto your Linux guest via SSH (or Telnet, if your site doesn't use SSH)
discover the PID of your running "cat > testfile" process, and then 
issue a "kill -9 <pid>"  to stop it.
