I've used this method more than once, mostly successfully.  The only
caveat is that if there's heavy I/O and limited memory for the LVM you can
end up with lockups during the migration that may require a reboot to
clear.  There's no data loss and you can redo the migration from where it
left off - but there's still an outage.
