I regularly mounted files between MVS and z/Linux and the translation (ASCII/EBCDIC) takes place automagically. I believe that the NFS server also takes care of the NL/CFLF issues - but its been a while since I looked into the setup. I think the key will be to use the MVS system as the NFS server and the Linux system as the client.
