Hello Larry,

I tried a few times the Text Only installation method just to make sure and if 
you can't get X Windows or VNC to work, I suggest a installation using a 
kickstart file - using kickstart you can setup the partition method that you 
want and have an unattended installation of the OS.
The Text Only installation mode won't let you define the disks as you mentioned 
(at least during my tests it did not let me do it)

About VNC:
How did you setup your PARM file? 
vnc vncpassword=XXXX mpath (does it look like this at the end?)

also when it asks you to connect via ssh, did you use the ssh -x install@IP  
("-x")  ?
