We upgraded RHEL6 to RHEL7 by building new RHEL7 servers. Our Redhat rep told 
us it was not a good idea to upgrade RHEL7 on top of RHEL6.  The Redhat 
installation manual has a section for z systems, and is pretty good. 

There is an IBM cookbook for RHEL7 also... it is written more for someone 
building the environment from scratch, so I had to figure out which pieces 
worked in my environment.  The cookbook does have the best example of booting 
into emergency mode though.  

As I have been working with RHEL7, these are the books I have found to be the 
most helpful.

Device Drivers, Features, and Commands on Red Hat Enterprise Linux 7.5
