It sounds like a great idea. I myself use pcemu every now and again for testing ELKS, 
but I don't rely on it too much as it is not as reliable a test platform
as a real machine. Some code will work fine in an emulator, but won't work
on real hardware as the 8086 has some strange behavoir in some circumstances.

I have also run ELKS in vmware, but I think that is quite an extreme solution.
vmware is very heavy.
