By far the best way to sort incoming mail is to use procmail(1).
I have procmail recipes like:

        :0 :linux/apps/$LOCKEXT
        * ^TOlinux-apps
        | /usr/lib/mh/rcvstore +linux/apps

to store incoming linux-apps messages in my linux/apps MH folder.
Your MTA should be able to use procmail for local delivery.
Sendmail definitely can, and is preconfigured to do so on most
Linux distributions. If not, you'll need to set up a .forward
to call procmail for you. I assume fetchpop delivers fetched
mail via SMTP to port 25 on the local machine? So long as it
does, then procmail will pick it up as normal.

Are you using smtpd from inetd? If so, is there any reason for
that, rather than using a traditional MTA like sendmail, qmail
etc.?
