internet services

Hello folks,

Can someone tell me how to avoid starting the internet services (like nfs, uucp, 
snmp ...) and how to prohibit the server to respond the telnet requests, or the 
talk requests, in order to get the maximum security for protecting my server 
from internet attacks.?
